Cashews are never sold in their shells because the shell contains a caustic resin chemically related to urushiol, the rash-causing oil of poison ivy; even cashews labeled raw have been steamed or roasted to destroy it.

The cashew tree belongs to the same plant family as poison ivy and the lacquer tree, which is why shelling the crop is hazardous work.
